Say...Yes to Yams!

In our family sweet potatoes are a staple year-round. Not just for Thanksgiving and Christmas, my husband will eat yams any time of the year. The other night I was needing a side in a hurry(as usual) and I came up with this yummy yam side.

What you will need:
  • 2 large cans of yams
  • 2/3 cups pecans
  • 1/4 cup dried cranberries
  • 1/8 cup 100% maple syrup
  • 1/4 cup squeezed orange juice
  • spices: cinnamon, nutmeg, allspice
Preheat oven to 400

I lined my large baking sheet with foil, then strained both cans of yams, and spread them out on the lined sheet. Sprinkle your pecans, cranberries, add spices to taste, over the yams. Then drizzle the maple syrup over everything, and splash the orange juice on last. Bake for about 20-25 minutes, and voila!
A Delicious side dish that will have your family saying, "Yes, to Yams" ~ Enjoy Beck

My cousin puts mini marshmallows on his for holiday dinners whereas I'm more of the pureed yams with candied pecan topping for our family holiday dinners. During the rest of the year I prefer to eat my yams in chunks with a little butter but this recipe looks really good, so I'm going to have to try it. Thanks for sharing!

I put this recipe on my Tickler and I am finally going to try this. I do wonder if omitting the cranberries would make a difference?? He’s doesn’t like them, but I could just tell him to pick them out. I also wonder how I could pin this? Thank you for sharing!!
