Easy and Delicious Italian Dishes #MomsLoveColavita

I never dreamed that I would see the Booper eat eggplant and enjoy it with a smile on his face. As a mom that's a huge win in my book. Anytime I cook one meal for our whole family and don't have to make adjustments for the little guy I'm pleased with myselfThe best part of making this delicious dish with eggplant and peppers was using the Colavita products. The recipe was so easy to prepare!

We received the Colavita Simply Italian Gift Basket which included everything needed to make this Eggplant and Sweet Pepper Veggie Pasta. We topped the pasta dish with some fresh cheeses and had a salad on the side, but the meal would have been complete without the extras. The Simply Italian Gift Basket includes:

To recreate the Colavita Eggplant and Sweet Pepper Veggie Pasta I used the Extra Virgin Olive Oil, Jar of Eggplant and Sweet Peppers, Marinara Sauce, and the Penne Rigate from the gift basket. Simply following the Colavita recipe from their Italian recipe library this dish turned out amazing. The sweet peppers were my favorite flavor from this recipe. I would definitely buy the jar of Eggplant and Sweet Peppers to cook this meal again. Such a unique pasta dish and I love that it was meatless and everything could come from the pantry.
After enjoying our filling meal we indulged in a sweet treat from the gift basket. The Almond Cantuccini is a crunchy cookie that goes great with coffee.   39. I visited the Colavita site and one item that looked delicious to me was all natural Patsy's Vodka Sauce. Paired with a bruschetta with the Colavita Aged Balsamic Vinegar of Modena would be wonderful.
