My sister at Coupons and Lesson Plans has always made this most delicious Orange Blueberry bread, and I wanted to do something to make it my own, so here is my fancy take on her yummy bread recipe.
You simply take her recipe, and bake it in a mini bundt pan. I did things my way, and this recipe still turned out sweet and tempting.

My little guy couldn't wait to get his hands on one of these, and he gobbled it up!
You will need:
- 2 cups flour ( I used Unbleached Whole Wheat flour)
- 1 t spoon baking powder
- 1/2 t spoon salt
- 1/4 t spoon baking soda
- 1/4 cup boiling water
- 2 Table spoon Butter
- 1 egg (I used egg beaters)
- 1 cup sugar~ I used Wholesome Sweeteners Organic Sugar.
- 1/2 cup Orange Juice
- 1 1/2 fresh Blueberries
- Powered Sugar~ I used Wholesome Sweeteners Organic Powdered Sugar
Preheat your oven to 350.
Step 1. Grease your mini bundt pan around each of the sides and bottom, I used Bakers Joy spray which makes this step easy.
Step 2. In a large bowl, Stir together the first 4 dry ingredients. Set aside. Heat your water( I used my microwave) Stir in the butter until melted. In a medium bowl combine egg, sugar, OJ and butter with water. Stir until well blended. Then add to your dry ingredients stirring until moistened. Fold in 1 cup blueberries.
Spoon batter into your mini bundts ( this should make 10-11 minis) avoid over filling.
Step 3. Bake about 25-30 minutes until tooth pick inserted comes out clean. Using a butter knife flip out onto wire rack for cooling. Sprinkle with Powered Sugar. If desired top minis with 1/2 cup fresh blueberries. Enjoy!
