I'm not sure if it's all the Pinterest pictures with bacon or just me, but I've been craving bacon lately. I've always loved bacon, but I have never craved it like I have the last few weeks. I was looking at the chicken I had to cook the other night, and I was filled with disdain. Not another boring salad with chicken on top. I was tapping my foot and trying to think of ways to dress up my chicken flavor for a different salad. Then I spotted the package and I knew I had my answer. Bacon.
I'm sure there are lots of delicious ways to use bacon with your salad but here's how I made our bacon wrapped chicken salads. This tasted wonderful, and I'm sure we'll be having this again when our salads start to get boring. We've also had this with baked sweet potato as a side and the flavors were great together.
You will need:
- 3 Chicken Breasts
- 7-8 Slices Of Bacon ( I used thick sliced maple cured bacon)
- Your Favorite Barbecue Sauce
- Maple Syrup
- Grape Jelly (optional)
- Lettuce
- Tomato
- Crumbled or Shredded Cheese
Preheat oven to 400. Bake Chicken on foil lined sheet at 400 degrees for 25- 30 minutes or until there's no pink. Then slice each breast into about 5 strips. Cut each strip of bacon in half and wrap around the sliced chicken. In a bowl mix half of cup of Barbecue sauce with 2 tablespoons of Maple syrup and 2 tablespoons of Grape jelly (optional) then brush over the wrapped chicken. Return to the oven and back until the bacon has caramelized and crisped around the edges. Prepare your salad: chop lettuce and tomato sprinkle with cheese of choice then top with the bacon wrapped chicken. Enjoy!

ReplyDeleteThat sounds scrumptious! Pinning this to my Good Eats board. I have all of those ingredients and will give it a try. I buy chicken tenderloins most of the time instead of the breast because they are more tender so I will have to adjust the cooking time. Have you tried wrapping the bacon while the chicken is cooking? I'm just wondering if the chicken will get too done?

I'm excited to try this...have you ever made a spinach salad with crumbled bacon, dried cranberries, and a somewhat sweet creamy italian dressing (I like doing a homemade one with some honey)? SOOooo tasty. P.S. I LOVE how you have your pages up at the top as photos!! That is so eye-catching.
ReplyDeleteHi Liz, Mmm Bacon. No I couldn't be a vegetarian either, but we are finally starting to get more variety in our veggie section at the grocery store so it helps. That spinach salad sounds amazing! I love dried cranberries and we tend to add spinach to all our salads since I need the extra iron. Everyone seems to be on the kale bandwagon these days. Am I the only one who thinks it tastes like dirt?

ReplyDeleteI don't eat bacon, so I can't say too much about this haha (the level of saturated fat alone is enough to make me run in the opposite direction). I'd recommend to everyone to use romaine lettuce, since iceburg has essentially no nutritional value. I wonder what kind of alternative people who don't consume meat could use instead? The ingredients list is very interesting, it sounds like it makes a well-balanced meal as far as flavor goes. Great pictures though! Although I would have liked to see a photo of all the ingredients laid out prior to any cooking :).

He says that bacon saves most recipes!! He is such a bacon man! I have seen him fry up a pound of bacon to eat all by himself as a snack!
